This is a quick recipe when you get home from work and the kids are starving (don’t they look like seagull, around you when you are cooking, screaming that they are starving).
I usually serve the fish with wild rice or mashed potatoes and a green vegetable, like steamed broccoli where you can add garlic butter and grilled sliced almonds.
Ingredients:
- 250 ml milk in a soup bowl
- 250 ml flour on a waxed paper
- 2 eggs beaten in a soup bowl
- 250 gr bread crumbs on waxed paper
- 8 pieces of cod, washed
- 30 ml butter
- 30 ml olive oil
Method:
- Melt butter and oil in a large frying pan
- Dip the fish first in milk, then in flour, eggs and bread crumbs
- Fry fish until golden (about 3 minutes)
- Serve with lemon wedges
