You can replace the salmon with a large trout.

Ingredients:

  • 50 ml chopped green onions
  • 50 ml butter
  • 10 chopped mushrooms
  • 1 ml tarragon
  • 30 ml fresh parsley
  • Salt and pepper
  • 50 ml cream
  • Salmon (about 1.5 to 2 kg)
  • Lemon juice

Method:

  • Pre-heat the oven to 4000 F
  • Melt 30 ml of butter and add the green onions, mushroom, tarragon and parsley. Add salt and pepper to taste
  • Cook for about 5-6 minutes
  • Remove from heat and add the cream to the mushrooms
  • Stuff the salmon with the mushrooms and close the belly with butcher rope
  • Place the salmon in a baking dish
  • Melt the remaining butter, add the lemon and pour over the salmon
  • Bake for 15 minutes then reduce the heat to 3500 F for another 15 minutes
  • Serve with melted butter and lemon

This is a delicious dessert when we come back from apple picking on a nice Sunday afternoon. It takes only a few minutes to make it and allows you to taste your freshly picked apples right away.

Ingredients:

Mixture:

  • 1 l sliced apples
  • 75 ml white sugar
  • 30 ml flour
  • 2 ml cinnamon
  • 15 ml butter
  • 30 ml lemon juice

Topping:

  • 175 ml brown sugar
  • 175 ml flour
  • 75 ml soft butter
  • 1 ml salt
  • 125 ml chopped nuts

Method:

  • Place the apples in a baking dish (9X14X2 inches)
  • Mix the white sugar, flour, cinnamon and butter then spread the mixture on top of the apples
  • Sprinkle the lemon juice on top
  • Mix the topping ingredients together and spread over apples
  • Bake for about one hour at 3250F

Talk about easy to make. You can use raspberries or blueberries instead of the strawberries. I would personally NEVER use fruit from a pie preparation (like Sheriff for example). For me, this would be a sacrilege. Yeurk!!!

Ingredients:

  • One can of Eagle Brand milk
  • 250 gr of cream cheese
  • 75 ml lemon juice
  • 2 ml vanilla
  • One pie crust already baked (or a cooked Graham crumps crust)
  • One pack of frozen strawberries, thawed
  • 5 ml corn starch diluted with a bit of water

Method:

  • Mix the first four ingredients together and pour the batter into the baked crust
  • Place the pie in the refrigerator for at least two hours
  • In a sauce pan, heat the strawberries until the juice begins to boil
  • Add the corn starch and mix well
  • When cooled, pour the fruits over the pie

Ingredients:

  • 250 gr softened cream cheese
  • 150 gr unsalted butter, room temperature
  • 750 ml icing sugar
  • 5 ml vanilla
  • Juice from one lemon

Method:

  • Cream the butter and cream cheese in a bowl
  • Slowly sift in the icing sugar with the butter/cream mixture
  • Add vanilla and lemon juice and mix well

This is a quick recipe and very practical when you are arriving from work and in a rush. While the fish is in the oven, you can prepare white rice and vegetables

The sauce of this recipe is very good with white rice.

Ingredients:

  • 400 gr cod or sole
  • 30 ml lemon juice
  • One can mushroom soup
  • 1/4 can of milk
  • 250 ml grated cheese (cheddar or mozzarella)
  • Salt and pepper to taste

Method:

  • Rinse fish under cold water and pat dry them
  • Place fish in a baking dish and squeeze lemon juice over the fish
  • Combine the mushroom soup and milk and spread it over the fish
  • Salt and pepper to taste
  • Cover with the cheese and bake at 3250 F for 25 minutes

I find that the ribs taste much better when we take the time to remove as much fat as possible before baking them. I hate to chew on a piece of fat.

Ingredients:

  • 1.5 kg baby back ribs with fat removed
  • Water
  • 2 large onions, chopped
  • 3 garlic cloves, chopped
  • 15 ml butter
  • 125 ml vinegar
  • 125 ml water
  • 60 ml Chili sauce
  • 30 ml lemon juice
  • 30 ml Worcestershire sauce
  • 7 ml salt
  • 5 ml powder mustard

Method:

  • Cut the ribs in a portion of about 3 or 4 ribs
  • Place the ribs in a large pot and cover with water
  • Boil the ribs for about 45 minutes
  • During that time, cook the onion and garlic in butter for 5 minutes
  • Add the other ingredients and cook for another 10 minutes
  • When the ribs are cooked, drain and transfer to a large baking dish.
  • Cover with the sauce and cook for one hour at 3000F

My mom used to make these pork chops. They bring back great memories and not so great ones. Because I keep my cooking oil in an old soap dish bottle, one day, I used the wrong bottle and cooked the chops in dish soap! Now you know that I can make a gross mistake when I am cooking.

Ingredients:

  • 30 ml oil or butter
  • 6 pork chops, about 2 cm thick
  • One chopped onion
  • 30 ml brown sugar
  • 50 ml lemon juice
  • 30 ml Worcestershire sauce
  • 250 ml water
  • 39 ml white vinegar
  • 200 ml ketchup
  • 2 ml dry mustard powder
  • Salt and pepper

Method:

  • Brown pork chops in oil (2 or 3 minutes each side)
  • Place chops in a baking dish
  • Mix all other ingredients and pour over the chops
  • Bake at 3500 F for about one hour

This sauce is very similar to the one my mom use to make when I was young. It brings back memories every time I eat it.

Ingredients:

  • 175 ml ketchup
  • 75 ml Chili sauce
  • 5 ml Dijon mustard
  • 5 ml lemon juice
  • 5 ml Worcestershire sauce
  • 5 ml sweet relish
  • 50 ml finely chopped celery
  • 50 ml finely chopped green onions
  • 5 ml brandy

Method:

  • Mix all the ingredients in a sauce pan
  • Bring to boil and let simmer for about 15 minutes
