My friends John and Jackie introduced me to this delicious pie. John comes from Florida and worked several years in New Jersey. It’s there that Cheryl and I visited them. It was during one of those visits that John prepared an excellent dinner topped with this pie. Just delicious.

Ingredients:

  • One can of condensed milk (400 ml)
  • 15 ml lime zest, chopped
  • 125 ml lime juice
  • 2 ml salt
  • 2 egg yolks, slightly beaten
  • One baked pie crust
  • 2 egg whites
  • 30 ml sugar

Method:

  • Preheat oven to 3500 F
  • Mix the condensed milk with the lime zest, the lime juice, egg yolks and salt until it thickens because of the chemical reactions between the juice and the milk
  • Pour in a baked crust
  • In a bowl, beat the egg whites with the sugar into firm peaks
  • Transfer the egg whites over top of the pie and bake for 10 to 15 minutes, until the meringue is brown

While Cheryl was at a cottage for the weekend with a bunch of girl friends and that the girls were NOT supposed to be home for dinner, I told myself that it would be great to eat a tuna steak with a good salsa. I went to my favourite fish store and I bought a large tuna piece. I started to eat it in sashimi as an appetizer. At the same time, the girls came home early and saw what I was doing and decided to change their plan and eat with me. The particularly appreciated the salsa.

You can replace the grape jelly by something else that is sweet. Also, if you do not have lemon salt, use regular salt with a bit of lemon peel.

Ingredients:

  • 125 ml chopped green pepper
  • 125 ml chopped red pepper
  • 250 ml chopped pineapple
  • ½ chopped onion
  • Juice of one lime
  • 60 ml apple juice
  • 30 ml grape jelly
  • 30 ml fresh chopped oregano

Method:

  • Mix all the ingredients in a non-reactive bowl and place in the fridge for 2 hours
  • Serve with tuna steak

This recipe come from the TV show A La diStasio. It is worth trying since it is so easy to make.

Ingredients:

Lime Mayonnaise:

  • One yolk
  • 10 ml Dijon mustard
  • Peel of one lime
  • 15 ml lime juice
  • 60 to 75 ml of olive oil
  • A few drop of Tabasco sauce
  • Chopped chives
  • Salt

Tartar:

  • 360 gr red tuna, sushi grade
  • Lime mayonnaise
  • Salt and pepper to taste

Method:

Mayonnaise:

  • Mix together the yolk, mustard, lime peel and lime juice
  • Add slowly the olive while beating
  • Add Tabasco sauce and a lot of chives
  • Mix well and place in the fridge

Tartar:

  • Chop tuna in chunk
  • Mix in the mayonnaise
  • Season with salt and pepper
  • Check taste and add more Tabasco sauce and/or lime juice if required
  • Serve on a bed of lettuce or endive
