This recipe comes from the CoupdePouce magazine. Many think that making a crème brulée is complicated. It is not really the case and it’s really worth trying.

Ingredients:

  • 625 ml milk
  • 4 large egg yolks
  • 125 ml condensed milk
  • 15 ml corn starch
  • 30 ml maple syrup
  • 100 ml maple sugar, chopped

Method:

  • In a sauce pan with a thick bottom, heat the milk until it starts evaporating
  • In a bowl, mix with a whisk the yolks, condensed milk and corn starch, until it becomes smooth
  • Keep whisking and slowly incorporate the hot milk
  • Add the maple syrup and mix well
  • Remove the foam, if any
  • Pour the preparation into 5 small dishes (250 ml or six of 180 ml) for crème brulée
  • Place the dishes in a shallow pan such as a rectangular baking dish
  • Add boiling water in the baking dish, up to about half the height of the crème brulée dishes
  • Bake at 3500 F for about 30 to 35 minutes, or until the preparation is cooked, except the centre will still be jelly
  • Remove the crème brulée from the baking dish and let cool for about 2 hours
  • Just before serving, sprinkle the maple sugar on top of the crème brulée and, using a torch, heat the sugar until it caramelizes

This is an old family recipe. For many, bread pudding is for the poor, Me, I love it. It is probably because I eat out too often in restaurants for business. This is real home cooked food.

  • 500 ml milk
  • 125 ml sugar or brown sugar or even better, maple syrup

  • 125 ml brown sugar
  • 30 ml flour
  • 15 ml butter

Banana Flambé https://www.denismartel.ca/fr/2010/04/banana-flambe/ https://www.denismartel.ca/fr/2010/04/banana-flambe/#comments Sun, 18 Apr 2010 20:08:09 +0000 https://www.denismartel.ca/?p=143

If there is one dessert easy to make it is this one. As a variation, you may want to make small crepes and place the cooked banana in the middle of the crepe, folding both sides on top of the banana. You can then decorate the crepe with a raspberry coulis, drizzle with melted chocolate or some whipped cream. Simply delicious and sweet!!!

Ingredients:

  • 4 ripe bananas
  • 50 ml butter
  • 175 ml maple syrup
  • 30 ml brown rum

Method:

  • In a large skillet, melt the butter
  • Slice the banana into four (cut once length wise and once on the width)
  • Cook the banana in a frying pan for about 4 to 5 minutes, turning them once
  • Add maple syrup and bring to a boil
  • Let boil for about 1 to 2 minutes
  • Warm the rum in a microwave, pour in the frying pan and flambé

Pecan Pie https://www.denismartel.ca/fr/2010/04/pecan-pie/ https://www.denismartel.ca/fr/2010/04/pecan-pie/#respond Sun, 18 Apr 2010 20:00:07 +0000 https://www.denismartel.ca/?p=138

This is a classic. I suggest you serve it warm instead of cold as in the restaurants. It is much better from my point of view.

Ingredients:

  • 3 eggs
  • 250 ml maple syrup (or corn syrup if you don’t have any)
  • 60 ml melted butter
  • 125 ml sugar
  • 1 ml salt
  • 5 ml vanilla
  • 250 ml pecans
  • One pie crust uncooked

Method:

  • Mix together the eggs, syrup, butter, sugar, salt and vanilla
  • Place the pecans at the bottom of the pie crust
  • Pour the preparation on top of the pecans
  • Bake at 4000 F for 25 to 30 minutes

Lise’s Ham https://www.denismartel.ca/fr/2010/04/lises-ham/ https://www.denismartel.ca/fr/2010/04/lises-ham/#respond Sun, 18 Apr 2010 13:52:43 +0000 https://www.denismartel.ca/?p=81

My friend Lise is a great cook and it’s always a pleasure to go for dinner at her place.

Her sauces are particularly delicious. I wish I could make them as well but unfortunately it is not the case!

I ate this ham for the first time when Lise invited us for an Easter Brunch. I found it great not only because of the taste but also because it is so easy to prepare.

Ingredients:

  • Ham about 2.5 to 3 kg
  • Olive oil
  • One can of pears
  • 250 ml maple syrup
  • Some cloves
  • One orange sliced and then cut in two
  • 250 ml honey or brown sugar
  • Ground cinnamon and ginger

Method:

  • Place the ham in a pan, skin facing up, and rub it with oil
  • Bake the ham for 45 minutes at 3250 F
  • Take out the ham from the oven and remove the skin but leaving the fat
  • Cut the fat in squares diagonally, about 2 cm
  • Using the cloves, stick the pears and oranges on each square
  • Mix the other ingredients and pour over the ham
  • Bake another 45 minutes, brushing the sweet sauce on top every 10-15 minutes
