This is an old family recipe. For many, bread pudding is for the poor, Me, I love it. It is probably because I eat out too often in restaurants for business. This is real home cooked food.

Ingredients:

Pudding:

  • 375 ml bread (crust removed)
  • 500 ml milk
  • 125 ml sugar or brown sugar or even better, maple syrup
  • 2 eggs
  • 30 ml butter
  • 2 ml nutmeg

Caramel sauce:

  • 125 ml sugar
  • 125 ml brown sugar
  • 30 ml flour
  • 15 ml butter
  • 375 ml boiling water

Method:

  • Place the bread in a baking dish (9 X 13 inches)
  • Warm the milk and pour over the bread
  • Mix the eggs and sugar and then the butter and nutmeg
  • Pour egg mixture over the bread
  • Bake at 3500 F until the pudding is firm (about 30 minutes)
  • In a sauce pan over low heat, mix together the sugar, brown sugar, flour and butter
  • Gradually increase the heat, until sugar begins to caramelize, and produce a slight burnt smell
  • Add the boiling water and stir until the sugar has melted and the sauce has thickened

This is a French classic dessert. It is easy to prepare, even at the last minute.

Ingredients:

  • 6 peeled and cored sliced apples
  • Juice from half a lemon
  • 125 ml butter
  • 200 ml sugar
  • 5 ml nutmeg
  • Pie crust

Method:

  • Peel and slice the apples
  • In a bowl, mix the apples and the lemon juice. This will prevent the apple to oxidize
  • Melt the butter and sugar and cook for about 5 minutes, stirring often
  • Add the apple and nutmeg to the sugar and cook for about 5 minutes
  • Cover the pan with a pie crust and bake in the oven for 45 minutes at 3500 F
  • Remove the pie from the oven and let cool for 30 minutes
  • Place a large plate on top of the crust and turn the pan upside down so the pie fall in the plate (be careful)
