I often use a cake pan in the shape of an animal, toy or a character when I am making this cake for a kid’s birthday.

What takes a long time to prepare is not the cake but the icing the cake with all the different colours!

Ingredients:

  • 600 ml cake flour (sifted)
  • 15 ml baking powder
  • 2 ml salt
  • 125 ml shortening
  • 375 ml sugar
  • 2 eggs
  • 5 ml vanilla
  • 250 ml milk

Method:

  • Pre-heat oven to 3500 F
  • Beat the sugar and shortening together
  • Add the eggs and mix well
  • In another bowl, mix the flour, salt and baking powder
  • Sift the flour into the first mix, alternating with the milk and vanilla
  • Mix well and pour into a birthday cake pan (mould of favourite child character) or two round 20 cm cake pans
  • Bake for about 40 minutes.

By putting the dough in the refrigerator, it helps to make it less sticky…maybe my wife should put me in the refrigerator sometimes!

Ingredients:

  • 125 ml shortening
  • 125 ml butter
  • 250 ml molasses
  • 250 ml brown sugar
  • 250 ml milk
  • 2 eggs
  • 1 l flour (roughly)
  • 10 ml baking soda
  • 10 ml grounded ginger powder

Method:

  • Break the shortening with a fork and cream it
  • Add brown sugar and mix well
  • Combine the baking soda with the molasses and then add to the butter mixture
  • Add milk, flour and ginger and mix until smooth and thick
  • Place the dough in the refrigerator to cool for about one hour
  • On a flat surface, dust with flour and roll the dough to about 0.5 cm thick
  • Using a cookie cutter or a glass if you do not have any, cut the cookies and place on an un-greased cookie sheet
  • Bake at 3500 F for 10 to 15 minutes on the top rack.
