Delicious, particularly during a cold Winter day!!!

Ingredients:

  • 2 ounces unsweeted chocolate (like Baker chocolate)
  • 500 ml white sugar
  • 175 ml sour cream 15%
  • A dash of cinnamon
  • 2 ml vanilla

Method:

  • Melt chocolate over very low heat or in a double boiler
  • Add the other ingredients while stirring
  • Keep stirring until sugar has melted and the mixture is smooth
  • Increase the heat and bring to 2340 F, using a candy thermometer
  • Allow the temperature to reduce to 1000 F and beat the fudge
  • Spread the fudge in a dish (20 cm X 20 cm) and let cool.

This cake is Cheryl’s speciality. I think that every time a new person tastes this cake, they ask for the recipe. Now, you have the chance to have it in this cookbook!

Instead of making a big cake, you can also use this recipe to prepare muffins.

Ingredients:

  • 750 ml flour
  • 625 ml sugar
  • 5 ml salt
  • 15 ml baking powder
  • 15 ml cinnamon
  • One can of pineapple chunks
  • Enough vegetable oil added to the pineapple juice from the can to equal 400 ml
  • 4 eggs slightly beaten
  • 15 ml vanilla
  • 375 ml chopped walnuts
  • 375 ml chopped coconut
  • 325 ml puree of cooked carrots
  • 200 ml chopped pineapple

Method:

  • Preheat the oven to 3500 F
  • Grease two cake pans (about 22 cm) and place wax paper at the bottom of each pan
  • Sift the dry ingredients in a large bowl
  • Add the oil, pineapple juice, eggs and vanilla and mix well
  • Puree the cooked carrots in a food processor and then add the walnuts, pineapples and coconut. Continue to puree for an additional 30 seconds
  • Add the puree to the batter and mix well
  • Pour the batter equally in two pans and bake 30 to 35 minutes or until cake cooks
  • Let the cakes cool on a grill for about three hours before icing (see recipe)

This recipe may seem granola but it is worth it to try!

Ingredients:

  • 300 gr unsalted butter
  • 600 ml sugar
  • 200 ml brown sugar
  • 1 egg
  • 30 ml water
  • 5 ml vanilla
  • 180 ml flour
  • 5 ml cinnamon
  • 2 ml salt
  • 2 ml baking powder
  • 750 ml oatmeal (quick baking type)
  • 250 ml raisins

Method:

  • Pre-heat oven to 3500 F
  • Grease two cookie sheets
  • Cream the butter and both sugars until it is light and fluffy
  • Add the egg and beat vigorously
  • Add the water and vanilla to the mixture
  • Sift flour into the mixture, cinnamon, salt and baking powder
  • Add the oatmeal and raisins, mix well
  • Spoon the batter onto the cookie sheet and press lightly
  • Bake for about 15 to 17 minutes, until the edges are cooked but the centre still soft
  • Cool on a grill
